CILANTRO LIME BROWN RICE: CHIPOTLE COPYCAT

Ingredients

  • 2 Tbsp Avocado Oil
  • 4 cups Brown Rice (cooked)
  • 1-2 Limes (zested and juiced)
  • 1/2 cup Cilantro (chopped)
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  • Heat AVOCADO OIL until shimmering on medium-high heat in a non-stick skillet.
  • Add RICE; sauté and stir until thoroughly warmed (4-5 minutes).
  • Add LIME JUICE; sauté and stir until it's mostly absorbed (1-2 minutes).
  • Remove from heat; add CILANTRO, SALT, and BLACK PEPPER; gently toss to combine.
